The exposure is full east, and the slope is smooth and gentle. The peculiarity of this clime is that the grapes reach a significant level of ripeness very early. The strength of this great terroir is that it preserves great freshness with low pH despite the quick ripening. This powerful and very refined vintage comes from a vine of close to 100 years old, located in the hamlet of "Quintaine", which marks the junction between the communes of Viré and Clessé. The name of the wine actually comes from the fact that the plot is planted on the hillside facing the chapel of Quintaine, and thus this plot faces "toward the Priests". Quintaine provides a unique environment within the domain, due to the nature of its soils (Bathonian limestone and Oxfordian marl), as well as its east/south-east exposure. The wine of this unique clime is made in 100% oak barrels, in which it is left to develop for 24 months. The concentration generated by the natural dehydration of the berries is nothing but the work of time, which will go on to enhance this wine for many years. Due to the low production volume and the low yield (about 200 litres per hectare), the culture was developed for 2 years in glass jars. The yields are deliberately low (30 hectolitres per hectare) in order to preserve a good concentration. As with the entire estate, viticulture is organic. Harvests are manual in boxes so as not to degrade the quality of the grapes and avoid oxidation. The wine is made without adding sulfur and with a gentle extraction of color and tannins for a ripe and velvety taste. The ageing, during which the malolactic fermentation takes place, then takes place in oak barrels for about 16 months before bottling without clearing and without filtration. This is an ideal red wine for terrines, cold cuts, meats, grilled meats, powerful fish with spicy sauce, or cheeses. Red Gamay Dark red with garnet red highlights. The input for each pressing is minimal in order to preserve a lively and delicate taste.
